It’s no surprise if you follow me on Instagram that I’m obsessed with making rice paper rolls. I try to eat these at least 2-3 times a week – sometimes more!
I adore how quick and easy they are to throw together, especially if you buy precut/shredded fillings to roll them with.
My favorite combination these days is; romaine lettuce, yellow bell peppers, broccoli slaw, purple cabbage, red pepper flakes and sesame seeds. I normally dip them in a homemade peanut sauce – but I’m trying to be lighter these days with my food choices, so I opted for this teriyaki coconut aminos. It’s really good! I’m about to order my second bottle of it off of Vitacost.
Yes, it’s basically a salad rolled up – perfect for dipping! But that’s the best way for me to eat my veggies in abundance. Otherwise I neglect them, lets be honest. If you make meals fun and delicious, then you’ll actually want to eat them. That’s why I’m hooked on these. I know they’re good for me, I love making them and throughly enjoy eating them (because I get to dip them)!
I make at least 4-6 at a time, sometimes even 8. They’re completely guilt-free, so I eat them till I’m feeling full. Which is usually around 6, since I don’t add in a mock protein or anything. You can bulk these up if you do though, like organic tofu or rice noodles. Whatever floats your boat and keeps you satisfied.
