What I Ate For Lunch // Mint Chocolate Banana Ice Cream

Have you seen those “What I Ate Wednesday” posts/videos? Well I was binge watching Mary’s Test Kitchen on YouTube the other day and I thought to myself, “why am I not doing this too?!” – I then realized that I’m honestly too lazy to because I would get frustrated with editing that many videos and having a weekly deadline seems daunting. Dramatic much? Why yes, yes I am. I just don’t want to promise something and then not deliver on it.

So I thought I’d keep it simple and share my lunch from time to time. Nothing extreme or time consuming, but maybe it will help some of you with ideas.
We can test this out for a month and if it’s helpful, I’ll keep it. But if it’s not catching on then we can scrape it and say I tried.
I’ll share this maybe once a week. Starting with today! Well, this was my lunch on Wednesday, but I’m sharing it today. Some of you might have already seen it on my Instagram.
For lunch I kept it simple and made banana ice cream, aka frozen bananas blended with a liquid. It’s super easy to throw together and anything that requires just my blender makes me very happy.
What I Ate For Lunch // Mint Chocolate Banana Ice Cream
Mint Chocolate Banana Ice Cream
Ingredients:
5-6 ripe Bananas, frozen
Filtered Water, to blend (can sub non-dairy milk)
1/2 scoop Chocolate Protein Powder, optional (can sub cocoa, cacao or carob)
1-2 drops of Mint Extract or Leafs
Topped with a Cocoa Mint Squarebar, Rawmio Almond Silk Butter & Vitacost Desiccated Coconut.
I just blended it all up, poured it into my lovely heart-shaped bowl and topped with extras for good measure.
What I Ate For Lunch // Mint Chocolate Banana Ice Cream
Bananas are a pretty big staple in my diet. I’d say I consume around 15-25 in a typical week. Just because that works for me. It’s cheap, tasty and gives me energy. I’ll also add some dates if I want something even more filling.

    Woah, did you eat all 5-6 bananas in one go? That’s one of my goals for this year – to be less terrified of mass fruit and to test how it fares against pre-diabetes. It looks SO delicious!

      Yup! It’s funny, because I can only eat maybe 3-4 bananas in a sitting and then I’m tired of eating, but not full. But if I blend them, I can consume 10+ and feel amazing. I’m a very thirsty person, I always have water with me so I think blending bananas works best for me. Plus it saves me a ton of time not cleaning a ton of stuff and taking however long to eat it. Sometimes you need fast! Haha, every moment counts.
      That’s an awesome goal, wishing you the best in achieving it. Bananas are pretty amazing, I can’t imagine not eating them daily.

        Mmm, I definitely need to incorporate more – esp before exercise – blending will definitely help with that, but I’m glad to know that I’m not the only one that doesn’t get full, even after a few – even with veggies I have to pack away what looks like obscene amounts and then I’m still nibbly after. 🙂

    You’re not wrong about editing videos and weekly deadlines being a bit of a pain. lol I really thought that WIAW videos would be an easy, quick way of sharing some meal ideas. Then it turned into this weekly project that spans two days to complete. Oh lessons! I’ll keep doing them though because…I started…and can’t stop. Problems. 😉

    I love your chocolate mint nice-cream idea. I could go for some myself right now… <3

      You’re seriously vegan super woman in my eyes, I have no idea how you manage to juggle all of it. I can’t even manage a recipe post a week lol so I tip my hat to you, I hope I can step up my video game this year. You inspire me to make it happen <3
