You guys, this is it. I finally mixed a combo of flavors that is so AMAZING! I’m on such a bbq kick lately and I thought it would be fun to experiment with what I had on hand. If you’re a garlic lover like me, you must try this out. You could even marinate the garlic in sriracha or teriyaki sauce!
BBQ Roasted Garlic Tostadas
(Yields about 4)
Gluten-Free Corn Tortillas, I used Food For Life
1 Avocado, cubed
1 Medium Tomato, diced
8 ounces Garbanzo Beans, already cooked
1-2 Lemons and/or Limes, juiced
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
Red Pepper Flakes, to taste
Black Pepper, to taste
Pink Salt, to taste
Roasted Garlic Cloves
BBQ Sauce, to marinate
Start by turning your oven to broil and laying a couple tortillas on a baking sheet, sprinkled with a little lemon/lime juice.
Cook those till crisp, about 3-4 minutes, flipping when the tops get golden brown.
In a small bowl, combine your avocado, tomato, lemon juice and spices. Mixing till evenly combined.
In a small bowl, toss your roasted garlic cloves in a little BBQ sauce and let that sit.
Remove your tortillas from the oven and begin to assemble your tostadas.
Add your base avocado/bean mixture and top with a few pieces of bbq roasted garlic cloves. You can also add some hemp seeds for extra texture.
Serve hot, enjoy!
