Combine water, maple syrup, salt and chia seeds. Whisk and let sit for 5 minutes to thicken.
Preheat oven to 325 degrees F.
In a large bowl combine coconut chips, sunflower seeds and pumpkin seeds. Stir to evenly distribute.
Pour over thickened chia mixture. Fold together until everything is evenly coated.
Line a baking sheet with parchment paper or baking liner.
Portion 1 heaping tbsp scoop of mixture and gently flatten into a circular shape.
Bake for 18-20 minutes or until coconut turns a deep golden brown, on the middle rack.
Remove from the oven and let completely cool before transferring, about 15 minutes.
You can use agave syrup as well. I have tested this with half the syrup and it’s great too, if you prefer less sweetness. This can be made in a single layer and broken into pieces. However It will yield less toasted pieces and browning.
