After stumbling upon a super yummy snack of coconut seed clusters at my local bulk warehouse, I quickly became obsessed. With nursing my baby 24/7 comes snacking 24/7 as well. I’m literally hungry ALL. DAY. LONG! It’s frustrating. But I’ve found that increasing my protein and snacking on more nuts and seeds has drastically helped curb my appetite. If you’re like me I highly recommend giving it a try. All in all these are insanely addictive and still a better alternative to the chips and chocolate I gravitate towards. I’ve even got my husband hooked on these, and he “hates” coconut.
I really wanted to give making my own version a try. The store bought option, while totally vegan, is packed full of 3 different sweeteners. I’m forever grateful for more vegan snack options becoming available, however it’s still in my nature to replicate what I love. This allows me to save some money and potentially make it more wholesome in the process. I really feel like I’ve achieved that with this recipe. These are such a fun way to snack and satisfy your sweet tooth at the same time. I know I would love to receive a batch of coconut superseed clusters as a gift. Vegan Superseed Coconut Clusters

A slightly sweet and crispy snack! Loaded with heart-healthy omegas and plant-based protein from this powerhouse combination of seeds. A kid-friendly treat you can feel good about sharing with everyone. This recipe is sponsored by Vitacost.com
Ingredients
- 1 ½ tbsp Vitacost Chia seeds (+ 1 ½ tbsp water)
- 1 ½ cups Coconut chips, unsweetened
- ½ cup Vitacost Sunflower seeds
- ½ cup Vitacost Pumpkin seeds
- 4 tbsp Vitacost Maple syrup
- Pinch of Salt
Instructions
- Combine water, maple syrup, salt and chia seeds. Whisk and let sit for 5 minutes to thicken.
- Preheat oven to 325 degrees F.
- In a large bowl combine coconut chips, sunflower seeds and pumpkin seeds. Stir to evenly distribute.
- Pour over thickened chia mixture. Fold together until everything is evenly coated.
- Line a baking sheet with parchment paper or baking liner.
- Portion 1 heaping tbsp scoop of mixture and gently flatten into a circular shape.
- Bake for 18-20 minutes or until coconut turns a deep golden brown, on the middle rack.
- Remove from the oven and let completely cool before transferring, about 15 minutes.
Notes
You can use agave syrup as well. I have tested this with half the syrup and it’s great too, if you prefer less sweetness. This can be made in a single layer and broken into pieces. However It will yield less toasted pieces and browning.
