It wouldn’t be customary to start a New Year without sharing a green smoothie right? This chia pudding parfait combines with my favorite topical green mango smoothie I shared forever ago. But with a spin on it, I used pineapple juice in place of coconut water. You could also use orange juice if you’d like or go crazy and use both!
Point being – you’re getting in greens and eating pudding. What’s not to love here? To make it super decadent I used full fat coconut milk but you can use any non-dairy milk in it’s place. To make it pure white, you guessed it – I used Vitacost’s white chia seeds. Definitely recommend stocking up on them. Chia seeds are an amazing source of omega-3 fatty acids, fiber and iron. They help your overall digestion too.
I love to keep chia pudding on hand in the fridge for quick snacks. Throw in some berries, coconut flakes and/or almonds and you’re good to go. It’s a great no-hassle option for kiddos as well. No-baking required! that’s a win-win for sure.

Tropical Mango Smoothie Chia Pudding Parfaits

Yield 3 servings
Ingredients
Chia Pudding Layer:
- 2 cups Coconut Milk
- ¼ cup Vitacost White Chia Seeds
- Sweetener, to taste
Green Smoothie Layer:
- 1 cup Frozen Mango
- 1 cup Baby Spinach
- ¾ cups Coconut Water or Orange Juice
- 1-2 pitted Medjool Dates
Yellow Smoothie Layer:
- 1 ½ cups Frozen Mango
- 1 cup Pineapple or Orange Juice
- 1-2 pitted Medjool Dates
Instructions
- In a medium-sized bowl add coconut milk and whisk in chia seeds. Let this sit for about 2-3 minutes and whisk again. Once it starts to thicken, add sweetener to taste and whisk one last time.
- Transfer chia mixture to an air-tight container or evenly divide between 3-4 pint-sized mason jars. Place in the fridge to chill overnight or until fully thickened, at least one hour.
- Blend smoothie ingredients together and layer each on top of your portioned out chia pudding. You can swirl the two smoothies together or layer them.
- Serve immediately with a straw and/or spoon. Mix everything together or enjoy each layer on it's own.
Notes
Chia pudding will keep for up to one week in an air-tight container in the refrigerator.
Make your smoothies fresh upon serving for best quality.
