Sea Salt Caramel Bliss Bites (Larabar Copycat)

Once upon a time I use to blog regularly. This month has been packed full of some unexpected news and more stress than I’m use to. Of course, that has nothing to do with today’s recipe post. I thought you should know I haven’t disappeared for forever, I am alive and well. I’ll probably share a more personal post on that in the coming months. As well as more lifestyle content in general – I am more than recipes! Though, I do love to cook more than anything.

Today I’m sharing a treat that’s my current obsession. Bliss bites aren’t a new concept. In fact, they’re actually so common it’s a little annoying. I promise, these are worth it though! I recently tried the Larabar bites when I stumbled across them on Vitacost. They were on sale, so I thought why not give them a try? After inhaling an entire bag I knew I was in trouble. Luckily the ingredients are listed right on the bag, all super simple. It felt like a no-brainer making my own. I’m excited to share with you all how to get the same concept at home. Saving you tons of money in the process, if you’re like me and want to eat multiple bags worth…

To prep these sea salt caramel bites, you’ll need a few things. I stocked up on Vitacost.com and got everything for a fraction of the price it would cost at my local grocery store. Meaning I can make five times as many bites for the same price as a single bag. Now I’m not saying they’re not worth it, but if you have the time and ingredients, homemade is always best. Mine are actually lower in sugar and higher in protein. Feel free to adjust ingredients as needed to fit your macros and tastebuds.

Of course dates are on the pricey side. I recommend buying them in bulk to save some money. Especially if you plan on making a few batches at a time. These hold up beautifully in the freezer for up to three months! To really get that caramel-like flavor you need to use maple sugar. If you’re not able to get ahold of it, coconut will work too. I’d suggest a touch of maple extract in combination with the sugar. You could also add a tbsp of maple syrup too.

This caramel bite is also the perfect raw crust. In fact, you very well might see it used as such in an upcoming recipe post for the holidays. I can’t get enough of it! But trust me when I say they make for a delicious road trip snack or halved and sprinkled over banana ice cream.

Vegan Sea Salt Caramel Bliss Bites (7 Ingredients!)

Inspired by Larabar's Caramel Sea Salt Bites

Ingredients

  • 1 cup pitted Dates or Date Crumbles, soaked in warm water
  • 1/2 cup Vitacost Almond Flour or Raw Almonds
  • 1/4 cup Vitacost Desiccated Coconut, more to roll
  • 1/4 cup Vitacost Coconut Flour
  • 3-4 tbsp Maple Sugar*
  • 1/2 tsp Vanilla Extract
  • 1/4 tsp Sea Salt

Instructions

  1. Remove the pit from each date and transfer to a bowl. Cover with warm water and soak for 5 minutes.
  2. In a food processor, combine everything except your pitted dates. Pulse until evenly combined and smooth in texture.
  3. Add in your dates and run until a smooth dough forms. It took my processor about 1-2 minutes total.
  4. Once your desired texture is reached, portion into ½ inch balls. I used a 1 inch scoop and cut each in half.
  5. Roll each bite between clean hands with a touch of coconut flour. This will keep them from sticking together.
  6. Transfer to an air-tight container and store in the fridge for up to two weeks. Alternatively you can freeze them for up to three months. 

Notes

If using date crumbles, adjust coconut flour to compensate. No need to soak ahead.

You can substitute for coconut sugar or any sugar you prefer. I'd recommend adding a tbsp of maple syrup to add that maple flavor or 1/2 tsp maple extract if you have it.
