If you’re still around, you might have noticed I’m on a bit of a hummus kick. It’s easy to make, full of protein and easily customizable. Which is perfect for me right now. I can’t stress enough the whirlwind that is motherhood. Most meals have been reheated multiple times, the rest of my meals come in bar or shake form. Life is pure chaos and while I absolutely love every second of it, sometimes mama needs some really real food. That’s why I’m so excited to share this hummus combo. It’s loaded with roasted red peppers and sun-dried tomatoes. Making it not only flavorful, but even more nutrient dense.
I’ve been making a batch of hummus weekly and changing the flavor combo to fit my cravings. Did you know chocolate hummus is a thing? Yeah. It’s amazing too. But back to the savory flavors, you can find a ton of other hummus combos here.
This is a great one to keep on hand to dilute down with pasta water for a quick and hearty pasta sauce. You can also use it as a base for a salad dressing. My personal favorite is to mix this with some tomato sauce for a different spin on pizza sauce. Basically the possibilities are endless and I cannot wait to hear how you use this hummus!

Roasted Red Pepper & Sun Dried Tomato Hummus
Yield 3 cups
- 15 oz. Garbanzo Beans
- 1 roasted Red Pepper
- ¼ cup Sun Dried Tomatoes
- ⅓ cup Lemon Juice
- ¼ cup Tahini
- 2-3 cloves Garlic
- Water, as needed to blend
- Salt & Pepper, to taste
- Wash and cut red bell pepper in half. Place on a lined baking sheet and broil on high until charred. Remove and carefully pull off the outer skin.
- Measure and blend all ingredients together until smooth. Scraping down the sides as needed. Adding water if desired to achieve a thinner texture.
- Taste and adjust seasonings as needed.
- Pour into an airtight container and chill until ready to serve.
Will keep fresh for up to 5 days.
