You know what’s delicious? A BLT! Yeah, vegans can eat BLTs too! (Vegans do it better… just sayin :P) So I thought I’d share a recent BLT remix I posted up over on my Instagram (@PlantStrongVegan). This is super simple but looks so dang fancy people will be impressed 😀
I used Veganic sunflower bread, truly my favorite right now for organic/sprouted breads when I’m needing some quick carbs without much guilt. Bread – need I say more? It’s just the best. End of story.
Bacon is from Lightlife, lovely brand I’ve been supporting since first going vegan. I know it’s not available to all of you, my apologies. I have a fix/substitute for it though! Which might sound abso-freakin’-lutely CRAZY, but hear me out okay?… carrots. Wat? Yes, carrots. I talked about carrot fries in my $25 meal plan challenge. But, the secret to it is obviously using the thickest/widest carrots you can find and adding in the right spices. I played around with it and marinated my carrot strips/peels in a combo of olive-oil, liquid smoke, vegan worcestershire, salt, pepper, paprika, garlic and onion powder. Phew, that was a lot. Swear to you though, it’s legit. I’ll do a full recipe post on those babies very soon! But the basic recipe can be found here.
Then I finished it all off with fresh arugula, vegan cream cheese and a kick of organic sriracha.
So it’s super simple, just different variations of the classics. It makes for an exciting interpretation of something everyone loves (hopefully). I’ll have to share the alternative version when I post up the recipe for carrot bacon 😀
