So I absolutely love sweet potatoes, well all potatoes in general actually haha but with sweet potatoes I like slices/chips the best. I’m not much on baking it and eating it like a normal baked potato. So, my biggest issue with doing chips is I have to cut them all, grease them all, line a baking sheet without them touching and they bake forever! So I needed a way that gave me the same pieces but didn’t take forever to prep and make a huge mess of dishes. That’s where this comes from! Keeping it all in one piece and you can break off slices as you eat π love it!
The Perfect Sweet Potato
(Serves 1)
Ingredients:
1 Sweet Potato
Earth Balance (vegan butter)
Green Onion (optional)
Lawrys or Salt
Your favorite potato toppings
Directions:
Preheat your oven to 425 degrees F
Line a baking pan with lightly greased foil
Rinse/scrub your potato, removing any dirt or spots or completely peel it
Using a sharp knife, cut very thin (1/8 inch) slits/cuts two-thirds of the way through your potato (Don’t cut all the way though!)
Bake for 50 minutes, checking to make sure it’s not burning
Take out and add vegan butter (I used Earth Balance), cheese or any other toppings (except chives, they’ll burn lol)
Be sure to get in-between each gap/slit
Bake for another 5 minutes, or until potato is soft and cheese is melted
Top with fresh green onions (optional)
