I’ve been talking about combos I love and this is definitely one of them! The perfect thing about this meal is it can be made together, baked at the temperature for the same amount of time. Which is always great when you’re in a hurry and want a good meal quickly. You could even prep this the night before, pre cut fry slices and marinate the tofu already cut into bite-sized pieces.

Sweet & Spicy Tofu
(Yields 2-3 servings)
1 block Tofu, firm
1/3 cup Teriyaki Sauce
1 tbsp Agave Nectar
1 tbsp Mustard
1/2 tbsp Sriracha, adjust to your heat level
1-2 tsp Red Pepper Flakes, adjust to your heat level
2 Garlic Cloves, minced
Preheat oven to 415 degrees F.
Press tofu for 10-15 minutes till most of the water is removed.
Cut into bite-sized squares.
Grease a baking dish with coconut oil.
Line and bast with two-thirds of sauce.
Cook for 15 minutes, flip & baste with remaining sauce.
Cook for another 10 minutes at 425 (topped with sesame seeds).
Turn oven off and let rest for 5-10 minutes.
Sweet Potato Mini-Fries
1 large Sweet Potato
Wash and dry
Cut in half, cut 1/4-1/2 in. strips, cut in half horizontally
Line on Silpat or parchment lined baking sheet
Bake at 415 for 15 minutes, flip & repeat
