So this one time, I got really bored and was like “Damn, I want a peanut butter cup“, just kidding.. I want one of those every single day of my life. Anyways – I decided to make a quick freezer fudge so I had something on hand I could reach for to satisfy my sweet tooth. These are seriously SO easy to throw together and they taste like perfection, if you love that chocolate + pb combo as much as I do!
Salted Peanut Butter Cup Freezer Fudge
(Yields about 30-40 pieces)
Himalayan Pink Salt, to top
In a medium sized bowl, fold together creamy peanut butter and coconut butter till evenly combined. You might have to use a glass bowl over a small pot of boiling water to melt it so it combines better. Just depends on how hot or cold it is where you are.
Add in your liquid sweetener of choice and adjust the sweetness as necessary.
Pour your mixture into a sealable glass pyrex container, preferably a small square or circle with a 6 inch diameter (6×6).
Cover and let sit to chill in the freezer for at least 1-2 hours, or until firm.
In a small cup, whisk together your cacao drizzle ingredients and set that aside.
Check on the pb fudge, using a sharp knife cut evenly into your preferred portions. I did about three quarters of an inch by inch squares.
Over the top you can drizzle the cacao mixture and sprinkle pink salt, as desired.
Serve cold, these will melt a little if they sit at room temperature for too long.
Store extras in the freezer, these will keep for months…. if you can keep your hands off of them!
