Overnight Coconut Chia Oats
(Yields 1 serving)
1 cup Coconut Milk, any non dairy milk will work
1/2 cup Rolled Oats
2 tbsp Coconut Sugar
1 1/2 tbsp Chia Seeds
In a medium bowl, combine all ingredients and mix throughly.
Pour into a mason jar or air tight container and store in your fridge overnight, 6-8 hours.
Serve cold with fresh or frozen fruit on top.
I personally like to use frozen fruit so it keeps the oats cool. I also like adding my favorite superfoods to give it even more of a boost! For this batch I added frozen organic blueberries, strawberries, blackberries, hemp seeds, white mulberries and shredded coconut.1
