Let’s Eat! | Granola “Candy” Protein Bars

August 28, 2013 by Margaret Leave a Comment

I finally got around to creating a protein-packed granola bar to fuel me during my workouts! This is a super sweet treat that gives me a boost and definitely satisfies my sweet tooth cravings! So give them a try, add in your favorite super foods and tell me what you think 🙂

Granola “Candy” Protein Bars
(Yields 16-18 bars)

3 cups Rolled Oats
1 cup Peanut Butter (slightly melted) (I used White Chocolate by Peanut Butter Co.)
1/2 cup Organic Agave (maple syrup or honey)
1 1/2 tbsp Flax, Chia, Hemp seeds & Sunflower Kernels (optional)
1/3 cup Almond Flour (finely ground almonds)
1/4 cup Raisins (I did golden & regular mixed)
Coconut oil

Portion everything out into a large bowl
Slightly melt your pb in a microwave safe bowl for no more than 30 seconds
Mix till fully incorporated and pour into a 9 1/2 x 13 1/2 glass pan that’s been greased with coconut oil (if you use a smaller pan they might hold up a little bit better too)
Freeze for 4-5 hours or overnight

These are pretty crumbly, so store them in your freeze using gallon sized zip lock bags. I use two, spacing them apart with two rows of four. Then I lightly press the air out, seal and flip the bag so it’s bent in the middle and the bars are stacked onto each other, with the bag separating them. So you can stack both bags, folded in half and they don’t take up much room in your freezer.

Serve frozen, they will come to room temperature quickly and fall apart.

Also, these are full of sugar. Which almost every granola bar is today. So if you’re not a fan of super sweet bars, you might wanna stay clear of these. Hence the “candy” added to the title. They literally taste like a candy bar, Snickers to be specific and I love it!

These are great for me before a workout or as a snack every once in a while. Don’t go crazy and eat these all the time. I’m not condoning these as healthy, by any means. But it’s a quick blend of some super foods and protein to get you going, if you’ve got a sweet tooth like me.

Also, try out combos of your favorite dried fruits, seeds and nuts! You really can’t screw these up. Just make sure everything starts sticking together before you transfer it to a pan.

Hope you all enjoy!
