I don’t think you could ask for a dish any easier or more delicious than this! Well… aside from my peanut sauce + spring rolls which I’m totally hooked on! 😛 But this is definitely a go-to for that leftover rice from takeout night. This is also, yet another meal that can be made on a tight budget. You get your veggies, make it healthier with coconut oil and you could even change it to brown rice if that’s more your taste preference. So it’s versatile, easy and cheap! I want you all to be firm believers that living a plant-based, vegan lifestyle can be affordable, healthy but delicious all at the same time!
Coconut Fried Rice
(Yields about 2 servings)
1 Takeout box of Rice, about 2 cups cooked
1 Carrot, shredded
1/3 cup Peas, frozen
1 tbsp Coconut Oil
1-2 tbsp Coconut, flakes
1-2 Garlic Cloves, minced
1 tsp Ginger, grated
Pink Salt & Pepper to taste
Over medium high heat, using a wok or skillet – heat your coconut oil till melted.
Add in your ginger, garlic and left over rice.
Keep it moving till it’s heated through, adding in the peas & shredded carrot.
Toss everything till fully cooked, spice to your preference and finally add the coconut flakes once the heat is turned off.
Give it a final toss and serve warm, topped with more coconut flakes.
