I wanted to do a second variation of yesterday’s recipe but using all my new goodies from BetterBody Foods. So I came up this these! 😀 and I couldn’t be more obsessed. I have everyone hooked on these bites, what’s not to love?! Coconut – check, Cinnamon – check, Chocolate – check! Give these a go and let me know what you think. I absolutely adore making these half the size and folding them into my smoothies and banana soft serves.
Coconut Bliss Bites w/ Cacao Shell
1 1/4 cup Cashews
1/2 cup Shredded Coconut
3 tbsp Agave (any liquid sweetener)
1/4 tsp Vanilla Extract
2 tbsp Coconut Palm Sugar
1 tbsp Coconut, shredded
1 tsp Cinnamon, ground
1 tbsp Coconut Oil
1 tbsp Cacao Powder
2 tsp Maple Syrup (any liquid sweetener, optional)
In a high-speed blender or food processor, combine all your base ingredients (cashews, coconut, vanilla and agave).
Blend/pulse till smooth and malleable.
Pinch marble-sized amounts and roll, they don’t have to be perfect – you’ll roll again next.
On a small plate measure your coconut, coconut palm sugar and cinnamon.
Re-roll each dough ball till fully coated.
Pop them in the freezer and chill for 1-2 hours.
In a small mug, melt your coconut oil for 15-20 seconds.
Whisk in your cacao and sweetener till smooth.
Drizzle over coconut bites and watch the magic happen!
Store in your freeze and serve frozen/cold, enjoy!
