Coffee is something that’s based solely on taste and ranges from person to person. You’ll notice there are no measurements for this recipe. This recipe offers a basic instruction based on the size of the glass you’re using and gives you the room to adjust as needed to find your perfect blend. Allowing you to adjust the coffee to milk ratio to fit your needs. I personally like a lighter coffee because caffeine greatly affects me. So I only add about a fourth cup of cold brew to one cup non-dairy milk and a ton of ice with a few drops of monk fruit and vanilla paste to taste. I usually add an extra shot of coconut milk on top too.
I love to use Simple Truth products to make this instant cold brew coffee because everything is organic and I trust the ingredients used. A typical bottle of Simple Truth cold brew concentrate lasts me at least 12 drinks. So for the price of about two coffees out, I can make at least 12 at home exactly how I like it. Save yourself the time and money!
A typical sweet cream cold brew uses heavy cream and water to dilute the cold brew, so this is closer to an iced latte in theory. However you can use a vegan half & half replacement to greater replicate that texture. A full fat coconut milk is a great alternative for this, which can be diluted with water in place of any non-dairy milk. It’s a very slight difference in the end result but worth mentioning if you want that richer flavor comparable to heavy cream.

Instant Vanilla Sweet Cream Cold Brew
Yield 1 serving
- In your serving glass fill half with cold brew, one third if you like it not as strong.
- Top with non-dairy milk until light in color and sweeten to taste. Add a tiny splash of vanilla extract as well.
- Give it a good stir and fill remaining space with ice, if desired.
I used unsweetened almond milk and a splash of coconut milk for a creamier consistency. Vanilla Bean Paste or fresh Vanilla Beans yield a better flavor if you can get ahold of either one instead. I like to use liquid monk fruit and/or stevia to sweeten my coffee, feel free to use any sugar you prefer. I have a simple syrup recipe here - 1:1 sugar to water or 2:1 coconut sugar to water. Bring to a boil and simmer. Add vanilla beans to make it flavored or leave plain.
