Measure and whisk together chia seeds with non-dairy milk. Fold in a liquid sweetener of choice, I used maple syrup.
In a medium bowl combine diced apple chunks with lemon juice, coconut sugar and cinnamon.
Assemble with date crumble at the bottom. Top with chia pudding, followed by spiced apple chunks.
Store in an air-tight container in the fridge for up to 4 days.
Serve with a drizzle of nut butter, optional.
