When life gets crazy and you put off sharing the literal easiest soup recipe on the planet. I promise, it takes less than 5 minutes to make and yet it took me two months to finally write it up and get photos taken so I could post it here. That’s to be expected when you devote all of your time to your kiddo, spare time just doesn’t really exist for me right now. Which is totally fine. I’m soaking up every moment I can with my son. Can you believe he’s already 9 months old?! I sure can’t.
Surprisingly enough he’s actually a big fan of this green pea soup. Last time I made it I gave him some to try and he kept wanting more, that’s a sign of approval right? It’s been an exciting transition Feeding Cal solids. We’ve been simplifying our meals to make them baby-friendly and he’s really enjoying trying new things with us.
Who doesn’t love a meal you can make in less than 10 minutes? This pea soup has quickly become a go-to for our meal prep rotation. It requires no cooking at all, in fact if you blend it long enough it will slowly warm up. I personally like to make a batch and store it for later. When we’re ready to eat it I portion out a couple of bowls and bring it to a simmer on the stove. We like to dip crispy bread in it and add some crispy chickpea on top. I think this would also be delicious with roast vegetables and sunflower seed parmesan. Definitely a quick and easy option for a cozy meal this fall.

Green Pea Hummus Soup
Yield 4 servings
- 15 oz. can Vitacost Garbanzo Beans, drained
- 4 cups Green Peas
- 2 cups Vegetable Broth
- Juice of 1 Lemon
- 3 tbsps Nutritional Yeast
- 2 cloves of Garlic
- 2 tbsp Tahini
- Salt & Pepper, to taste
- Measure and blend everything together until smooth, about 2 minutes. Longer if you wish to gently heat it through. Alternatively you can transfer to a small pot to warm up even more.
- Serve warmed with crispy chickpeas on top and toasted bread.
