Oh how time flies when you’re shuffling to meet deadlines. Despite the busy schedule, I’ve been craving some easy writing that’s focused on sharing all about things I’m loving. Back in the day I would try to keep up with monthly favorites posts, but always forgot or posted really late. This time I’m stepping up my game and keeping it easy breezy. If I post, I post. If I’m too busy, I skip a post.
Let me know if you’re interested in these at all. It gives me the opportunity to ramble about things I wouldn’t otherwise have the chance to share. If you have any ideas for more categories, I’m all ears!
I recently shared a Petit Vour review and talked about all the goodies from last month’s box. I’m still loving that lip scrub, it has made my lips so soft! Perfect for transitioning out of Winter to Spring.
Finally getting back into the groove of reading again. I use to read a lot more, but when you write everyday and reply to emails 24/7, sometimes recreational reading doesn’t sound so fun. This month I finished Big Magic – amazing, and I zipped through all the newer cookbook releases from mid-December. So many incredible books are being released each month, I’ll be sharing more for sure.
Right now I’m loving The Taco Cleanse, The Plantiful Table and Superfoods 24/7. All vegan, plant-based recipes and easy to follow along with. I’m especially interested in trying out the quinoa burgers from Superfoods 24/7 – let me know if you want to see a full review on that.
Also, I don’t know what category it would go under, but this month I completed my pantry shelving. I like to store my bulk ingredients (sugar, flour, grains) in half-gallon mason jars and now I have them up! Yay for more counter space. You can see them in the background of this photo. Hunter was helping me make some Easter cupcakes and I snapped this. I’ll share more on my shelves once the entire wall is complete, more is still being added!
My current obsession has to be dumplings, pierogi to be specific. If you follow me on Instagram you’ll know all about it. I wanted to work on my own recipe for a childhood favorite, I only wish I made these sooner. They’re absolutely amazing and my whole family agrees – better than store-bought! Which is a huge compliment, since they’re not only vegan but free of gluten too. Get excited! This recipe is going up very soon.
Occasionally I’ll have music playing in my Snaps (username: psvegan) and I usually get people asking what song I’m listening to in that moment. I recently created a Spotify account and now I’m obsessed. I really love all genres of music, but gravitate more towards Indie. Anything by M83, The Postal Service & Death Cab for Cutie makes me happy.
Right now I’m loving this song called “Do You Remember” by Jarryd James. I’m guilty of having it on repeat when I’m editing or needing to chill before bed.

I don’t go to the theater as much as I use to, but this month I did see Deadpool. I wouldn’t say it’s my favorite, but I enjoyed it. Not counting new movies, I started watching DVDs and rekindled my love for Scott Pilgrim vs The World. Definitely one of my top 10 favorite movies of all time. Anything gaming related is a plus, like Wreck it Ralph!
Recipe of the Month:
Lots of yummy recipes were posted this month so I thought it would be fun to highlight one of my personal favorites as well as a favorite from another blog.
This month it’s without a doubt my Zesty Ranch Dressing. I’ve talked about it on and on this month, I use it every single week and I’m so happy I finally shared a recipe for it on the blog. I’ve played with the recipe more and really love the combo of half raw sunflower seeds to half raw cashews and the addition of ground turmeric and hot sauce, for a little kick. This month has also been all about the comfort food. I found this recipe from Minimalist Baker and modified the sauce to make mac and cheese. It’s pretty incredible, thought I’d share the original source though. You can never go wrong with a big bowl of pasta!
