The heat is in full blast and watermelon coolers are a necessity! I had to share my absolute favorite combo for staying hydrated this summer. Something about watermelon + lime will always be a go-to for me. If you haven’t tried it before, do yourself a favor.
I know last week I shared some sangria mocktails, but can you ever truly have too many drink recipes? The answer is no.
While this is undoubtedly the easiest recipe I have ever shared, it’s worth the effort to assemble. I like to keep my drinks alcohol-free but feel free to spike it as desired. As is this is a great option for the kids AND you could even freeze any extras into popsicles!

Easy Watermelon Lime Coolers
Yield 2 servings
- 4 cups Fresh Watermelon, blended*
- ½ cup Sparkling Water*
- ⅓ cup Lime Juice
- 4-6 Fresh Mint Leaves
- 1 tsp Liquid Sweetener*
- In a blender combine cubed watermelon, lime juice, mint and sweetener. Blend until smooth, about 30-45 seconds on high.
- Strain evenly into two pint-sized cups with ice, if desired. Top off with sparkling water.
- Gently stir and enjoy chilled with a lime wedge.
Alternatively you can prepare the juice base ahead of time to chill in the fridge for up at 12 hours before it’s needed. Add the sparkling water upon serving so it doesn’t get flat.
I used a few drops of monk fruit for the sweetener and a sugar-free pineapple flavored soda water. Blended watermelon yields about 20 ounces of watermelon juice.
