Cheezy Butternut Squash Pizza + Garlicky Spinach & Caramelized Onions

Remember that one time I made this butternut squash cheesy sauce and then I said I made a pizza with it and would share the recipe. Like 3 months ago… yikes. Better late than never, my apologies! This is the pizza of my dreams, I’ve always wanted to make a pizza from scratch, in all aspects and I’m so proud of myself for doing so.

If you’re ever feeling ambitious, I highly recommend giving this a go. It’s going to take a lot of prep time, so I’d advise you to make the sauce and dough the day before. Or you can be a badass like me and just sit in the kitchen for 4 hours haha. So worth it. That’s why I took so many photos too.

Cheezy Butternut Squash Pizza + Garlicky Spinach & Caramelized Onions

(Yields 1 Large)

Ingredients:
Pizza Dough, recipe below
(1 c wheat f + 1 1/2 gluten baking f)
1 1/2 cups Cheezy Butternut Squash Sauce
1 bag Organic Spinach, lightly sautéed
4 Garlic cloves, diced
2 Yellow Onions, thinly sliced (caramelized)
Pink Salt, to taste

 

BUTTERNUT SQUASH PIZZA4
Basic Pizza Dough Recipe
Slightly modified, original recipe is from Holly, @healthyconscience

 

Ingredients:
1 envelope Active Dry Yeast
1 cup Warm Water (110 degrees)
1-1/2 tsp Organic Sugar
2-1/2 cups Unbleached Flour, organic
2 tbsp Coconut Oil
1 tbsp Garlic Powder (optional)
1 tbsp Dried Basil (optional)
1/2 tbsp Dried Oregano (optional)
1 tsp Pink Salt

 

BUTTERNUT SQUASH PIZZA
Directions:
Proof yeast with warm water and sugar. Let stand for 10 mins and make sure foam and bubbles form.
Combine flour and salt. Pour in oil and yeast mix. Stir until combined.
Knead on floured surface for 5 mins.
Place dough in well greased bowl, cover with dish towel, and let rise in a warm place for 30 mins.
While your dough is rising, start cartelizing your onions. If you want an in-depth tutorial on that, here is a great one. This typically takes anywhere from 30-60 minutes. Depending on how thin you slice the onions and how large your pan is.
I deglazed my pan of onions at the very end with 1 tbsp apple cider vinegar + 1 tsp coconut palm sugar. Feel free to use balsamic vinegar, I just wanted to try something different.
Prep your spinach by sautéing it with either a splash of water or oil and the diced garlic. Turn the heat off after the leafs have all wilted. About 2-4 minutes.
Grab your dough and line a baking sheet with parchment (optional), spread your dough out about 1/4-1/2 an inch thick.
Add your butternut squash cheesy sauce, evenly spread it out leaving about an inch along the sides dry.
Bake pizza at 425 degrees for 20-25 minutes.
Serve hot out of the oven, topped with sautéed spinach and caramelized onions. You can add them after the crust + sauce bakes or throw everything together and bake all at once.
