True love is toast with hummus and avocado. While Valentines day is long since passed, I’m sharing this super simple avocado toast combo now because it’s better late than never.
Guess who isn’t adjusting well to motherhood and full time working from home life? Me. Thank you for your patience as I get back into the swing of things. Juggling it all hasn’t been this smooth process like I naively anticipated it would be. I’m only able to eat foods with one hand, usually cold and I’m practically topless all day nursing this growing boy. Among many other actual struggles I won’t bore you with. The fourth trimester has been the hardest by far.
If you had painted me a picture of this being my new life this year I wouldn’t have believed it. I guess I assumed I’d bounce back and have this whole routine figured out and in place. News flash – you can’t force a newborn to get onto your schedule because it’s convenient for you. Again, so naive. But hey I’m learning and I know it will get easier with each passing month. He’s an absolute dream and I wish I could spend every waking (and sleeping) moment with him. I genuinely miss him when he’s asleep, even though he’s right beside me. I just can’t get enough of this kid! He’s also growing like a weed so I’ve been further conflicted with picking up work because I know that’s less time with him. C’est la vie. Mommy needs to pay the bills somehow. How do you mommas do it all?!
Back to this recipe though, if you can really call it that. I shared the hot lemon pepper buffalo hummus used below in my last post. It’s a game changer and really kicks up your mornings when added to some avocado toast. Trust me, give it a try and thank me later.
I’m a huge fan of the Little Northern Bakehouse’s gluten-free breads, that’s what I used for this. So many delicious vegan and gluten-free bread options are becoming more readily available and I’m so pleased! Highly recommend their brand if you’re able to find it near you. Otherwise, any toasted bread or rice cracker would be great for this.

Buffalo Hummus Avocado Toast
Yield 2 servings
- Toast bread until golden brown.
- Evenly spread with hummus.
- Thinly slice avocado and gently fan it out using your hand to press on it sideways.
- Top toast with avocado, a drizzle of ranch and sprinkle of chives or green onions.
- Season to taste with salt and pepper, optional.
