When I first heard about Alpendough I was immediently intrigued, a vegan AND gluten-free cookie dough?! Yes please! It’s actually almost impossible to find a pre-made vegan cookie dough, especially one that isn’t full of nasty ingredients. I know I can make my own as well, but after having the opportunity to sample these doughs, I’m not so sure I want to replicate them, they’re that incredible. That’s why I lost my marbles as soon as I baked a batch. Talk about perfect, I was able to adjust the baking time to accommodate my soft cookie needs (11 minutes @ 350 F) and let me tell you – the Double Chocolate Chip was hands down the best cookie I’ve ever had in my life, up until this point that is. The beauty of finding something like this that’s so quick and easy to make, along with being acceptable for my dietary needs, is a total game changer. Now I’m not saying you should go out and eat a pint of this a day, but I wouldn’t judge you if you chose to do so. Thank goodness raw, vegan cookie dough is safe to eat! I love being able to sneak a bite when I’m craving something sweet.

Now for that beautiful ice cream sandwich, doesn’t it look amazing? Thanks to all the wonderful options available for vegans, I was able to make this effortlessly. I baked two Double Chocolate Chip cookies and sandwiched them together with a scoop of So Delicious Strawberry ice cream + CocoWhip! It tasted exactly like a Neapolitan – I’m making more very soon!
