Almond Butter Caramel Chocolate Bark

Did I mention I like chocolate? You might be seeing a theme lately. I can’t deny my insane sweet tooth. So you shouldn’t either!

I had this crazy idea to just go for it with all my favorites. Blending up almond butter with pitted medjool dates and maple syrup. It made the most intense caramel-like concoction. I literally want to make a jar of it and eat a spoonful every single day. Something about dates and maple syrup together makes me the happiest. Add in a touch of salt and the star of the show – chocolate and you’ve got yourself a party.

Originally I made this and wanted to swirl in the almond butter caramel. Let me tell you right now that that’s impossible. Save yourself the time and avoid going that route. Instead it works best to mix about three fourths of the caramel into the melted chocolate and then spread that out onto a parchment lined baking sheet. Then thin out the remaining caramel and drizzle it on top. Top off with a sprinkle of toasted coconut chips and a bit of coarse salt. This combo is incredible! If you love all of these ingredients separately, combined you’re sure to thank me later.

Aside from the combo being literal perfection, if I do say so myself. The beauty lies in mixing the almond butter caramel together with the melted dark chocolate. You’re left with a slightly firmed bark that’s not overly hard. Making it that much easier to devour, be careful. I’m not ashamed to admit I ate half of this batch in the span of a week…

But in all seriousness. This bark is perfect for the holiday season and sharing with loved ones. While I could easily eat it all alone at home, it’s ten times better making a big batch and giving it out to friends and family as a super sweet diy gift option. I’m a sucker for homemade gifts. Like the hot chocolate mix I shared last week. You can’t go wrong with making something special.

Almond Butter Caramel Dark Chocolate Bark

Yield 12 people

Ingredients

  • 4 cups Vitacost Dark Chocolate Chunks
  • 3/4 cups Smooth Almond Butter, any nut/seed butter
  • 1/4 cup Medjool Dates, pitted (about 3-4 large)
  • 2-4 tbsp Maple Syrup, more as needed
  • Toasted Coconut Chips, optional
  • Sprinkle of coarse Sea Salt, optional

Instructions

  1. In a blender combine nut butter with pitted dates. Pulse until smooth, adding maple syrup as needed.
  2. Pour chocolate into a heat-safe glass bowl and melt in the microwave at 30 second intervals. Mixing after each session until smooth. Alternatively you can do the same thing by placing the glass bowl on top of a medium sized pot with a cup of water over medium low heat.
  3. Once melted, stir in 3/4's of the almond butter caramel.
  4. Line a dish or baking sheet with parchment paper and pour melted chocolate/caramel blend.
  5. Store in an air-tight container in the fridge for up to two weeks.
  6. Blend remaining almond butter caramel with maple syrup to thin it out.
  7. Sprinkle melted chocolate with coconut chips, remaining caramel and coarse salt as desired.
  8. Let sit to chill in the fridge for 10-15 minutes before cutting/breaking into pieces.  
  9. Store in an air-tight container in the fridge for up to two weeks. 

Notes

Offer ingredients to a loved one to create at home for a semi-homemade holiday gift.

Depending on the consistency of the nut butter used, you may need to adjust the amount of dates to maple syrup ratio. You're looking for a thick consistency like molasses. Add the dates one at a time.
