Please tell me I’m not the only one that was caught off guard by the New Year. I mean in one moment I’m putting up my Christmas tree and in the span of what felt like a week it’s already 2017 and I’m weeks behind on content. I’m perfectly aware of the actual date now, but my lack of time management is getting increasingly terrible at an alarming rate. It sounds cliche, but as I grow older the time seems to pass me by faster and faster. I’m sure many of you can agree to feeling the same way. Of course, I digress from the actual point of this recipe post.
Today I’m finally kicking off content geared towards the new year in hopes of inspiring you to live this time with an abundance of health. If you’re not looking to change up your routine or incorporate new recipes into your diet – this might not be an exciting next month for you, but hang tight. I’ll definitely be sharing sweets along the way.
I’m really taking this time to inspire myself to eat better. During the holidays it’s easy to get carried away, I’m guilty of it. That “treat yourself” mindset sets in and lingers for far too long. I’ve indulged in many vegan treats, it’s time for some balance. I’m in dire need of a change and maybe some of you are too. So let’s help each other out and eat better!
Starting with a classic I have yet to ever share my own recipe for – the infamous Acai Bowl. I have a hard time finding frozen acai in the store, but I’ve found using acai juice to yield an even better flavor and it’s less expensive to keep on hand. Highly recommend checking out Zola if you’re in the market for acai juice or coconut water. They’re my favorite!
A little goes a long way, leaving you with acai for days. But you can always freeze extra juice for later use. Kind of like how I did with my Smoothie Starters. You can easily swap out the liquid for acai and make Acai Smoothie Starters. I love the versatility with freezing fruits and greens. It’s a total lifesaver for me on the mornings where I can’t be bothered with cooking. Smoothies and smoothie bowls are forever my go-to breakfast of choice. I’m guilty of adding all the toppings though. Fresh fruit, raw nuts/seeds, shredded coconut and a drizzle of nut butter. It makes this way more indulgent and dessert-like. Acai Berry Smoothie Bowl
- 2 cups Blueberries, frozen
- 1 cup Strawberries, frozen
- 1 Banana, frozen
- 1/2 cup Acai Juice, as needed
- Fresh Strawberries, Blueberries, Shredded Coconut, Nut Butter & Pumpkin Seeds, to top
- Measure and blend everything (minus toppings) together in a high-speed blender until smooth. Transfer to a bowl and top with fresh strawberries and toppings like shredded coconut, as desired. Serve immediately with a spoon and dig in! Switch to a straw if it begins to melt, enjoy.
