Yield 2 servings
Measure and combine all ingredients into a blender jar.
Blend on high until smooth, adding ice as desired.
Evenly pour into two cups and enjoy immediately.
Garnished with a peach slice and fresh mint. I also coated the glass with a lime wedge and dipped in coconut sugar, optional.
